La Vieille Fontaine, the gastronomic restaurant of the Hôtel d'Europe in Avignon's historic centre, occupies a 16th‑century house that pairs classical elegance with contemporary audacity. Menus are regularly renewed to follow seasonal arrivals. Dining takes place in an elegantly reworked dining room or in the peaceful cour d’honneur shaded by century‑old vegetation. The dining room blends period charm and modern accents: tapestries by Antoinette Poisson, 18th‑century chandeliers and carved boiseries punctuated by contemporary neon. The kitchen presents a sincere, gourmand, terroir‑focused cuisine that sublimates local, high‑quality products through precision and classical technique. Dishes employ creative twists—herbs, flowers, emulsions, sauces and playful textures—to create surprise and emotion. The venue is recognised for modern cuisine (Cuisine moderne) and is a selected table in the Michelin context for its contemporary approach to Provençal terroir. The kitchen is led by Pascal Auger, who joined La Vieille Fontaine in June 2018. He brings a long career in renowned houses and has previously earned a Michelin star and recognition from the Guide Rouge.
