Bistrot le Héron

Bistrot le Héron is the casual bistro concept of the Moulin de Cambelong. The Rousseys relocated their project to the Moulin de Cambelong in 2023 after careers in top houses; Thomas trained with Sébastien Bras and Pierre Gagnaire. The team works with more than 60 local producers to source vegetables, meats, fish, dairy and other ingredients, prioritising seasonality, terroir and respectful technique to highlight produce rather than disguise it. A warm, convivial riverside bistro occupies a restored 17th‑century mill, with terrace and lounge areas by the water. The setting is relaxed, natural and intimate, with outdoor seating facing the Dourdou. The kitchen serves authentic, generous cuisine from local Aveyron products, privileging simplicity and freshness. The ingredient‑driven cooking adapts daily to market and producer arrivals. Émilie Roussey (Cheffe) trained in Souillac and Nice and worked in Saint‑Jean‑Cap‑Ferrat, Saint‑Tropez and with Ducasse in Paris; she co‑runs the Michelin‑starred restaurant E&T on site. Specialties include Aveyron produce‑driven dishes, seasonal vegetable‑forward preparations, generous convivial bistro plates and a riverside terrace seasonal menu; the bistro’s good‑value cooking was awarded a Bib Gourmand in 2026.
