Jean-Michel Couron

Jean-Michel Couron is a small modern restaurant in Nevers’ historic centre on the banks of the Loire, between Saint-Pierre and Saint-Étienne. The house operates with fewer than ten tables to prioritise continually evolving cuisine. It highlights regional sourcing: French meats and poultry; seasonal scallops (October–April); trout and fountain salmon from the pisciculture of Corancy; organic vegetables from nearby growers; artisan oils and local grains. Menus comprise market, discovery and tasting prix-fixe options and a vegetarian menu; taxes and service included. Dining spaces comprise contemporary, light-toned main room with round table and a surprising small 14th‑century vaulted room. The house is intimate and quietly designed to preserve guests’ tranquillity. Two floors below, carefully stocked wine cellar. The kitchen practises a modern, product-driven cuisine — a cuisine “de l’instant” — focused on seasons, freshness and short supply circuits with local producers. Jean-Michel Couron is the chef.
