Ristorante Aciniello, founded in 1948 by winemaker Michele Paolino, stands in the heart of Campobasso as a custodian of Molise's culinary heritage. Managed by chef Maria Di Cesare and her sons, the family upholds a tradition of fresh, locally sourced ingredients that highlight the region’s flavors. The menu features distinctive Molisan specialties such as lamb tripe, torcinelli (lamb sweetbreads and intestines), and the signature pallote pane, cacio e uova, prepared by Chef Maria herself. The dining experience is enriched by a wine cellar stocked with over 100 selections, emphasizing indigenous Molisan varieties like Biferno and Tintilia Molise DOC. Aciniello offers a rustic, cozy interior complemented by an outdoor dining area for summer months, located near Campobasso’s historic covered market. Open for lunch and dinner six days a week, it also hosts private events on Sundays.
