The team cultivates vegetables in its own nursery and sources ingredients from carefully selected regional producers. Where culinary sense requires, the kitchen supplements local produce with international top-tier products as precise complements. The kitchen works in a reduced manner, following a clear line and placing the essence of each ingredient at the center. Menus and a wine list are published on the restaurant website as downloadable PDFs. The cuisine is modern and seasonal, reducing preparation to highlight elemental flavours and the ingredient’s essence, and pairing regional sourcing with selective international premium products when appropriate.
