Atelier Acqua e Sale

Atelier Acqua e Sale, reborn from Atelier Dolce Amaro and renamed in 2025 after six years, preserves established team and spirit. It keeps a passion for Italian flavour, art of living and Dolce Vita and originates in the shadow of 'big brother' Dolce Amaro. The restaurant is recognised by the Michelin Guide (Selected) and, in winter, offers a complimentary digestivo to guests. Warm-toned walls and soft light give the dining room a cosy, cocoon-like feel, while a glazed wine cellar greets guests at the entrance and a semi-open kitchen reveals service. In fine weather a small garden opens at the back. The kitchen offers authentic, generous Italian cooking focused on seasonality and on evoking memories of different Italian regions. Dishes are composed with an aesthetic balance informed by the chef’s architectural training. The house is co-managed by front-of-house Nicola Marangi, originally from Puglia who has trained in hotel school in Italy and greets guests with warm hospitality, and by Fabio De Luca (Chef de cuisine and chef-patron), who has trained at Dolce Amaro under chef Felice Notarnicola.
