Aux Terrasses

Aux Terrasses is a boutique 4-star hotel and Michelin-starred gastronomic restaurant in the centre of Tournus, Burgundy, combining contemporary design with an acclaimed fine-dining table. The property’s boutique and cave form a distinctive destination where design, terroir and an inventive gastronomic approach converge. Dining room and hotel spaces use noble raw materials — exposed stone, steel, wood and large bay windows — to create a warm, sober and convivial atmosphere with pared-back, design-forward furnishings and ceramic tableware. Some suites have terraces and the property includes a garden courtyard. The cuisine is creative, modern and sustainable, anchored in Burgundian terroir yet open to global inspirations. Menus follow daily arrivals and seasonal produce personally selected by the chef, and the brigade works with local producers to marry regional recipes with refined, surprising combinations and precise cooking. Jean-Michel Carrette trained at the hospitality school in Poligny and in houses including La Tour Rose and Maison Troisgros. He took over the family establishment in 2005, preserved its Michelin-star legacy, and the Carrette family first earned an étoile in 1999; the house remains family-run. Specialties include creative, seasonally driven tasting menus, dishes anchored in Burgundian produce, freshwater fish preparations and escargots. The wine cellar, curated by the chef and sommelier, offers a very large selection of bio and biodynamic bottles and extensive natural wine pairings.
