Benders is a casual-dining restaurant in the heart of Birkenfeld. It operates within the Birkenfelder Hof building, which also provides hotel rooms and event spaces. The restaurant’s menu mixes regional classics, Mediterranean influences and occasional Asian accents to offer both familiar dishes and inventive combinations. Special event menus and themed dinners further underline its focus on seasonal, thoughtfully composed offerings. The venue occupies a pretty modernised half-timbered house with a chic-modern interior and a relaxed vibe. The restaurant has been recognised by the Michelin Guide with a SELECTED distinction for its relaxed atmosphere, friendly service and shapely modern-seasonal cuisine. The kitchen focuses on modern, seasonal cuisine that highlights product quality and precise technique. Menus emphasise regional, seasonal sourcing while also incorporating selected ingredients from trusted international suppliers, combining regional and French-Mediterranean influences with occasional Asian accents. Executive Chef Gerome Bender trained at the Hotelfachschule Heidelberg and brings experience from Villa Hammerschmiede, Wald & Schlosshotel Friedrichsruhe, Brenners Park‑Hotel, L’Table and Budersand on Sylt; he applies high technical precision to the kitchen. Specialties include tempura prawn with papaya and lime; porcini (steinpilz) ravioli with dashi‑pilz beurre blanc; lamb loin “John Stone” with Madeira and polenta; strozzapreti with Asian-style bolognese and gochujang; and a Wiener schnitzel served as a Thursday special.
