Contraseña draws from the heritage of traditional food houses in Cádiz, where local delicacies were shared openly. It merges this historic spirit with decades of culinary research and innovation led by chef León Griffioen. As the younger counterpart to Código de Barra, a longstanding Plaza Candelaria institution, Contraseña honors Cádiz and Andalusian culinary traditions while advancing them through creative techniques and a focus on premium, locally sourced ingredients. The dining room combines contemporary design elements with nods to Cádiz’s rich gastronomic culture, creating a warm, welcoming atmosphere. Chef Griffioen interprets local flavors using his expertise gained in Michelin-starred kitchens, while sommelier Paqui Márquez curates wine pairings that elevate each dish. Contraseña serves a communal table menu featuring standout dishes such as olive, “Paniza” with duck liver, traditional prawn fritters with spicy sauce, yogurt gazpacho with almonds, anchovies, and mint, garlic prawns in dry sherry, lamb with hamza and lavender sauce, and French toast paired with thyme ice cream.
