Die Alte Brauerei is a family-run gourmet restaurant housed in a converted 1877 brewery in the heart of Sankt Ingbert, offering a French gastronomic experience in a green, unusual setting. The house is led by Florian Dauphin and his wife Lorena Jil and presents a warm, generous table rooted in hospitality and a passion handed down through generations; the venue holds a Michelin Selected distinction, is associated with Maître Cuisinier de France and partners with Laurent‑Perrier. Nestled amid greenery, the converted brewery provides a warm, cozy atmosphere and a convivial, generous dining style that emphasizes sharing and comfort. The cuisine rests on classic French technique reinterpreted with modern touches and Belgian and Nordic influences, employing delicate cooking and occasional fermentations to seek elegance, lightness and precise textures. The kitchen is rooted in respect for product: menus change with the seasons, prioritise local suppliers, limit waste and explicitly favour responsibly sourced, refined fish preparations. Florian Dauphin is the chef; he trained in several large starred houses before returning to the family restaurant in September 2023. Specialties include the Menu Signature, Menu Découverte, a Menu Lunch (1.5 h), an à la carte selection, refined seasonal fish dishes and vegetarian menus available on request.
