Die Bürgermeisterei 1728 occupies the historic Bürgermeisterpalast, built in 1728 in the centre of Mühlhausen, and was created by proprietor Ina Liebau as a meeting place for creative, high-quality cuisine. The house philosophy “Aus Liebe zum Genuss” expresses a dedication to genuine enjoyment through seasonal, carefully sourced ingredients, bought regionally when possible and prepared without unwanted additives. The restaurant is recognised locally and has been selected by guides for its modern cuisine and high service standards, presenting a distinctive fine-dining experience without pretension. The interior offers small, intimate rooms and a generous entrance, complemented by a romantic beer garden and terrace. A visible open-kitchen “Genusswerkstatt” lets guests observe preparation, and the decor is stylish and gemütlich with seasonal festive dressing for events. The cooking is modern and creative, centred on seasonal produce with regional sourcing when possible and specialising in contemporary reinterpretations of Thüringer classics. Menus change seasonally and the restaurant offers set menus, brunches and themed arrangements, with wine pairings that guests praise. Chef Peter Löffler leads the kitchen, with previous posts at the Taschenbergpalais Kempinski and the Kastens Hotel Luisenhof.
