Éclosion

Éclosion is a bistronomic restaurant in the heart of Quimper. Marion Pelletan and chef Thibault Le Goff met during a trip to Oceania and opened Éclosion to realise their dream of welcoming guests into a warm contemporary universe. Marion draws on luxury hospitality experience, including concierge positions abroad, to provide friendly, personalised front-of-house service. Éclosion holds a Michelin Bib Gourmand and offers occasional monthly events such as a last‑Sunday brunch. The dining room is convivial, modern and warm, on quiet Rue Laennec in Quimper's historic centre. The venue aims for a welcoming atmosphere that encourages guests to return. The kitchen is seasonally driven and respects local terroir, showcasing fresh products from high‑quality producers. The chef renews the carte every month and composes lunch and dinner dishes that balance technique, flavours and textures. Thibault Le Goff trained at the Dinard hospitality school and worked in K2 Courchevel, Pickles Nantes and Ginette Bordeaux. His cooking emphasises technique, balanced flavours and evolving creativity. Specialties include fried potatoes with garlic; lemon and garlic green beans; a cheese plate; sweet potato dishes; and roussette (fish).
