The Gourmet Restaurant Friedrich Franz offers Michelin-starred dining in the historic Kurhaus by the Baltic Sea and presents an exclusive, intimate experience. Service is attentive and discreet, supporting an evening that places cuisine and guest experience at the centre. The restaurant has defended a Michelin star year after year since 2008 and holds 18 points from Gault Millau. The dining room features hand-painted silk wallpapers and glittering chandeliers within a quiet, elegant atmosphere. Ten tables seat up to 26 guests, creating a private and exclusive setting. The kitchen delivers modern, seasonal interpretations of maritime cuisine, combining precision and product integrity with creative presentation. Strong aromatic intensity and a careful balance of sweet and sour underpin dishes that pair regional and high-quality products. Head Chef Ronny Siewert trained with Henning Steller and worked in the kitchens of Residenz Heinz Winkler, Restaurant Dieter Müller and Waldhotel Sonnora. He led the kitchen at Chezann, where he earned his first Michelin star, and has headed Friedrich Franz since March 2008. Specialties include a seasonal tasting menu, dishes highlighting fish and crustaceans, creative sweet-and-sour flavour pairings and the use of regional, high-quality ingredients.
