La Chapelle is the gastronomic restaurant of Château Saint‑Jean, a five‑star hotel beside Parc Saint‑Jean near Montluçon. Owners restored the historic site in 2016, pairing history and contemporary design with a focus on sensory, refined dining experiences. The dining room provides an intimate stage for culinary presentations. The château emphasises local sourcing: AOP cheeses, quality meats and AOC wines such as Saint‑Pourçain and Côtes d’Auvergne. The 22‑cover venue appears in Michelin selections. It sits in a former 12th‑century chapel transformed into an elegant, intimate dining room by Patrick Jouin and Sanjit Manku. The hotel offers a bright bistro under a large glass roof and a cosy bar centred on a Volvic stone fireplace. The kitchen serves creative, modern French cuisine described as "traditional yet nuanced," with bistronomic options and a recurring terre‑mer influence. Menus highlight authentic regional products and subtle culinary audacity. Olivier Valade is chef des cuisines and Michelin‑starred; he trained with Bernard Loiseau and Hélène Darroze and has experience restoring a star at La Maison Tirel Guérin.
