La Fabrique is a gastronomic bistro in Brie‑Comte‑Robert, founded in 2008, that combines tradition and modernity with charm. The team describes its cuisine as original and inventive, updated according to the seasons and influenced by international flavours, notably Vietnamese and Italian family roots. In the dining room Bruno leads service and highlights a curated selection of wines. The operation lists its staff as passionate professionals: Morgane, Valentin, Clément, apprentice Omar and dishwasher Djamila. In 2021 the team opened La Feuilleraie in Varennes‑Jarcy, dedicated to groups and private events. Housed in a former tuilerie, the dining room blends charm and tradition with a young, relaxed vibe. The atmosphere is informal yet gastronomic. Seating is arranged for typical restaurant service with a friendly, attentive team. The cuisine is modern, original and inventive, rooted in French gastronomy and refreshed by seasonal and international influences. The menu is built around weekly market purchases and a commitment to fresh, local sourcing. Dishes include vegetarian, Asian and exotic inspirations alongside French gastronomic technique. Chef Guillaume Lamory trained in prestigious houses before opening La Fabrique in his hometown. He personally visits Rungis regularly to select fish and regional producers, prioritising seasonality and short supply circuits. He leads the kitchen alongside executive chef Aloïs Doukhan.
