La Perle is a seafood and fish restaurant located on the Allées, in the heart of Cannes. Run by Maxime Gilman and Camille Verfaillie, the establishment offers a warm and friendly atmosphere focused on high-quality cuisine. Maxime Gilman has extensive experience, having managed a renowned fish and seafood venue in Mandelieu-la-Napoule for eight years before opening La Perle in Cannes. The kitchen, led by Chef Edouard Cantat, adopts a simple yet refined approach inspired by Provençal cuisine. Chef Cantat’s expertise as both a fisherman and pastry chef shapes the restaurant's identity. The menu is intentionally concise, emphasising freshness and quality with daily suggestions based on the catch and availability. Signature dishes include a Mediterranean rock fish soup with saffron, a classic bouillabaisse, and a selection of whole fish sourced from small boat fishing. La Perle works closely with local fishermen, suppliers from Brittany, farmers from the Forville market, and oyster producers to ensure top-quality ingredients.
