L'Aghjalle

L'Aghjalle is a family-run ferme‑auberge in the Reginu valley that combines a working agricultural estate, a seasonal restaurant and six guest rooms. The Savelli family opened the farm inn in 1995 and added rooms in 2005; the property is recorded in French from 1600 and in English from the early 20th century. Renovated stone and island-style buildings sit among olive trees around a garden and an open-air terrace, offering a calm, rustic island ambience in the heart of Balagne. Air-conditioned rooms reflect insular architecture, are individually decorated and open onto terraces and the garden within a Natura 2000 protected landscape near walking and hiking trails and the lake. The restaurant proposes revisited Corsican terroir cuisine that favours fresh local ingredients over haute gastronomy. Menus are seasonal and largely produced on site — vegetables, fruits, olive oil, veal and other meats come from the farm — and the auberge prioritises short supply circuits, works with Corsican producers and holds ABEP membership for traditional local livestock. The kitchen follows "from the garden to the plate" with dishes that change to the rhythm of the farm; in 2024 L'Aghjalle received a Bib Gourmand for offering carefully prepared dishes at moderate prices. The auberge hosts picnics and private events and highlights specialties such as Soupe corse; Tollari (potato and cheese fritters); Plateau de Prizuttu and other Prizuttu-based dishes; Pâtes farcies au Prizuttu; Civet de sanglier; and Moelleux à la châtaigne.
