L'Art de Vivre

L'Art de Vivre is a Mediterranean-focused, modern restaurant at Château l'Hospitalet that presents a philosophy of respecting and magnifying nature through its cuisine and experience. The kitchen tends a vegetable garden and sources aromatic herbs from the nearby Massif de la Clape. It works with partner producers, notably the biodynamic Céleyran farm and small local fishermen and farms, and incorporates sustainably produced furnishings, linens and ceramics by local artisans to reflect the terroir. The dining room is a carefully dressed, redesigned space "nestled between earth and sky" with large bay windows framing surrounding nature; decor uses natural minerals, seasonal flowers and sustainable local materials and the room features locally made tableware. The cuisine emphasizes local and organic produce and sustainable sourcing practices. Chef Laurent Chabert has led the restaurant for 11 years and received the Michelin Guide green star for his commitment to sustainable practices alongside his culinary talent. Specialties include vertical-cuisine tasting menus, wine-and-food pairings with the biodynamic and organic wines of Domaines Gérard Bertrand, micro-seasonal Mediterranean vegetable dishes, Aubrac beef preparations and sustainably caught Mediterranean fish.
