Le Mana

Le Mana — restaurant and chambres d'hôtes in Saint-André-lez-Lille — occupies a house dating from 1885 and is run by a chef couple offering on-site guest rooms and a warm, convivial welcome. Mana, a Polynesian symbol of strength, love, humility and sharing, guides a signature approach that unites creative, terroir-focused cuisine with house-and-garden intimacy. Verdant setting between town and countryside frames an intimate dining room; décor and layout emphasize comfort and a domestic atmosphere. The kitchen practices a modern "cuisine d'esprit" that tells a story with each bite and surprises with inventive plates; chefs prioritise seasonal produce from nearby producers to showcase terroir, with set and tasting formulas evolving with the seasons. Maxime Leman, head chef, trained from a young age in hospitality schools, worked in Roubaix, Nice (including the Negresco), the Antilles and Polynesia, returned to Lille in 2015 and blends travel influences with instinctive, product-driven technique. Valentine Delhaye trained in hotel-restauration, worked at Meert and other kitchens, and collaborates with Maxime to develop increasingly elaborate and surprising dishes.
