Le Manège

Le Manège sits in the Rivotte district of Besançon at the foot of Vauban’s Citadel, a UNESCO World Heritage site. The restaurant offers the possibility to host corporate seminars and sells gift vouchers for its set menus. Set inside an 18th-century former military riding hall, the venue features two recently refurbished warm dining rooms and a shaded terrace. Subtle evening lighting transforms the space into a welcoming, home-like atmosphere. The cooking follows a modern bistro style: simple, refined and generous preparations focused on fresh, seasonal products and a convivial, family-oriented menu philosophy. The restaurant is recognized locally and is listed as a Michelin-selected address for its modern cuisine. Jean-Charles Lavier leads the kitchen and works exclusively with fresh products to guarantee quality. Specialties include Poulet aux morilles et vin jaune (chicken with morels and vin jaune); Foie gras poêlé aux pommes et griottines (pan-seared foie gras with apples and griottines); Saint-Jacques (scallops); Croûte aux champignons et morilles (mushroom and morel crust); and Paris-Brest (dessert).
