Le Serghi

Le Serghi, a revived family-run bistro at 15 Quai Georges Clemenceau, Saint-Martin-de-Ré, sits on the calmest stretch of the port. The house, an island institution for 40 years, was renovated and reopened in July 2021 by Parisian chef Philippe Tredgeu and wife Marie Tredgeu‑Foulon, preserving its soul while renewing décor and menu; Michelin Guide selected (SELECTED). Ground floor opens onto a sunny quay-side terrace; the dining room pairs soft greige-and-white décor, contemporary lighting, a massive original bar and comfortable banquettes. Upstairs a cosy privatisable salon has sage walls and a large sofa. Market-driven, seasonal French bistro cooking with bistronomy influences is inspired by island seafood and the chef’s Béarn and South‑West roots. The kitchen favours short supply chains — oysters from Cabane Océane, fish from Boutin (La Rochelle), bread from Laurent Lhenaff, local market producers and regional fromagers — and menus change with arrivals. Philippe Tredgeu trained in top Parisian houses and abroad (New York, Switzerland), worked with Meilleur Ouvrier de France Gabriel Biscaye and led L'Entredgeu in Paris for 14 years; at Le Serghi he focuses on delicate seafood cookery and terre‑mer pairings while respecting provenance and seasons. Specialties: Maigre en croûte de pain (Basque condiment); flame-seared marinated mackerel (soy pickles); breaded oysters (panko, veal foot, ravigote); gratinated oysters (burnt leeks, Pineau sabayon); Riz au lait (signature rice pudding).
