The menu leans into bold but refined pairings. A bisque arrives with merguez condiment and candied carrot. Poultry is served alongside endive cream, andaliman berry, gorgonzola, radish, and sage — a lot happening on the plate, but cohesively so. The veal dish brings together seaweed beurre blanc, artichoke, watercress, broccoli, and brousse cheese. These aren't safe choices.
