Mombo

Mombo is a gastronomic project founded by Gabriel Conti, a chef of Basque-Italian descent born in Brazil in 1981. His culinary path began in Florianópolis, Brazil, shaped by extensive travel and study, and further refined in Barcelona where he gained expertise in gastronomy, team management, and business, along with teaching at the Autonomous University of Barcelona. Established in Palma de Mallorca in 2022, Mombo blends tradition and avant-garde through a natural, authentic, and joyful expression. The restaurant focuses on local products and honest suppliers, honoring nature and ancestral culinary customs. It offers a traditional cuisine with modern influences, designed to uplift guests with its vibrant philosophy and genuine flavors.
