Nomad is the restaurant of Arnaud Tavares, a passionate travelling chef who has cooked around the world and brings those experiences to Vannes. He presents French cuisine both free and rooted in tradition, infused with influences and spices discovered during his travels. The kitchen applies innovative techniques acquired on the road and uses aromatic herbs and spices to produce bold, direct flavours; the chef balances acidity, bitterness and umami. The restaurant’s philosophy rests on sharing and discovery, both gastronomic and human, erasing culinary borders to blend local traditions with global flavours and to deliver a gustatory escape through quality cooking presented convivially. The dining room maintains a relaxed, convivial atmosphere that blends quality and friendliness. A terrace offers outdoor dining. The cuisine is French—described as 'free' and traditional—while incorporating tastes and spices from around the world; finishing techniques such as Binchotan grilling impart a characteristic smoky flavour.
