Paysages

Paysages is a restaurant in Bellême. It bases its concept on the intimate connection between plate and landscape and adopts the motto coined by farmer‑baker Roland Feuillas: “We eat landscapes.” The kitchen seeks to translate local landscapes, people and produce into simple, shareable plates. Paysages is recognised by the Michelin Guide as a selected address with a modern approach to cuisine. Photographs on the site are credited to Anne‑Claire Héraud. The dining experience is bucolic and closely tied to the surrounding countryside, illustrated by landscape and farm imagery. Imagery of outdoor wood fire and pastoral scenes suggests a warm, rustic, nature‑focused atmosphere. The tone emphasizes conviviality and a joyful spirit of sharing rather than formal fuss. The kitchen is rooted in the Perche terroir and the cuisine is seasonal, terroir‑led and respectful of the local environment. Menus change in tune with harvests, livestock cycles and the art of affinage. Preparations are traditional and intentionally unfashionable, with an emphasis on working ingredients lovingly to let their character shine; dishes feature affinaged local products. All cooking is performed entirely over a wood fire, a defining technique that shapes flavour across the menu. The house celebrates regional drinks — colourful ciders, poirés and wines — as part of the field‑to‑plate experience.
