Pirouette, opened in November 2023, is a neo-bistro from the team behind Les Agitateurs and stands a few steps from the Michelin‑starred Les Agitateurs, offering a dynamic take on contemporary bistro cooking. Founders and chefs Samuel Victori and Juliette Busetto, who have spent the past ten years creating lively, sensitive and elegant dining spaces, bring a human‑centred vision and a playful, exploratory cuisine that aims to innovate while remaining accessible and convivial. The dining room is cosy, warm and inviting, with a raw yet poetic aesthetic where elegance meets simplicity. Seating is arranged for convivial, sharing‑style meals in an intimate setting. Pirouette serves sincere, audacious, simple and delicate travel‑inspired dishes focused on quality ingredients, balancing classic French technique with bold, unconventional pairings. The menu changes seasonally, features Mediterranean influences and the kitchen builds dishes around the best available products. Specialities include catch of the day with a vegetable stew cooked in rockfish soup and rouille; pithivier of pigeon and foie gras with crunchy salad, figs and reduced jus; and Le Casse‑noisette — crème Paris‑Brest with petit‑lait ice cream and caramel hazelnut crisp.
