Restaurant De Lauzun

Restaurant De Lauzun is a Michelin-starred gastronomic restaurant in the historic Prieuré de Saint-Jean de Bébian near Pézenas, set within vineyards on a 1-hectare domaine that includes an olive grove. The house earned Jeune Talent Gault & Millau (2009), Grand de Demain (2014) and its Michelin star, first awarded in 2009 and retained since. The establishment pairs its gastronomic offer with a small hotel of ten rooms to create a unique oenotouristic experience. The dining room was entirely renovated and decorated by the chef and architect Raymond Morel, combining raw materials and contemporary design while preserving the domaine’s viticultural past to produce a warm, intimate atmosphere. A terrace overlooks the domaine’s 12th-century chapel, the presbytery and a park with a pool. The cuisine is modern French with a strong, identifiable flavour profile shaped by the chef’s international experience. Matthieu De Lauzun leads the kitchen, having trained and worked with Michel and Sébastien Bras and Paul and Marc Heaberlin and bringing extensive international experience from Japan, Thailand, Taiwan and Morocco. Menus are offered in 4-, 6- and 7-course formats with full and half wine pairings and a half-pairing option; a half-dégustation is available for designated drivers, and all meats served are sourced from France.
