Schistó

Schistó is a Michelin-starred restaurant housed in the historic main building of Quinta da Vacaria in Peso da Régua, Portugal. It stands as the only Michelin-starred venue in the Douro Valley, offering an intimate setting with just 14 seats. Guests experience a 10-moment tasting menu crafted by Chef Vitor Matos, which celebrates the authentic flavors and terroir of the region through a blend of tradition and modern culinary techniques. The open kitchen occupies the center of the dining room, turning each meal into a live performance where dishes are prepared and finished before diners. Ingredients come primarily from the estate’s organic garden and small local producers, emphasizing seasonal, regional freshness and sustainability. The wine pairing, selected by sommelier Carlos Eduardo, features vintages from Quinta da Vacaria’s old vines, enhancing the connection to the Douro’s wine heritage. Designed by Joana Astolfi, the space uses wood, green marble, and velvet to create a serene and refined atmosphere. This combination of architecture, cuisine, and service fashions a singular fine dining experience deeply rooted in Portuguese gastronomy.
