Sense is an isolated restaurant located in a canyon near the capital, providing a unique refuge for chefs dedicated to full experimentation. The establishment hosts only fifteen diners each evening, creating an intimate atmosphere where guests experience a six-course tasting menu that changes every eight weeks, highlighting a limited-edition and ever-evolving culinary journey. The kitchen is open, allowing young artisan chefs from around the world to interact directly with guests behind the scenes. The restaurant's design features brutalist architecture and an intimate microclimate, enhanced by theatrical elements such as a manually opened door and uniforms designed as an extension of the curtain. The experience unfolds in a leisurely, almost ceremonial manner, inviting diners to fully immerse themselves in the moment. Under the direction of Chef Alexis Andzouana, the current menu, "The Laboratory," explores avant-garde cooking through indulgent, woody flavour profiles, along with carefully crafted liquid and solid pairings. Each dish is designed to awaken the inner child, transforming technique into poetry and taste into memory. The team operates as a united tribe of ten artisans, blending roles without hierarchy to create a collective expression of curiosity, rigor, and attentiveness.
