In the heart of Caen Stéphane Carbone runs a product-focused restaurant under the "simple but demanding" culinary philosophy; the chef and brigade elaborate on-site recipes from raw ingredients, presenting all dishes "fait maison" with changing set menus. It emphasizes terroir, sourcing from Normandy, Lyonnais/Bresse and the chef's Calabrian heritage and runs weekly cooking and pastry classes. Close to the marina, the dining room features contemporary elegant decor in frank tones and a glassed-in open kitchen where guests can watch the team at work. A heated patio extends dining space in cooler months; service is welcoming and relaxed. Cooking is modern French, intent on highlighting and sublimating quality products without disguising them. Chef Stéphane Carbone trained in the Lyonnais and Bresse traditions, worked under Bruno Oger and Georges Blanc, opened L'Écailler and later his eponymous Caen restaurant.
