The menu focuses on terroir marin reinterpreted through modern, generous preparations with a strong respect for seasonality and local producers. Chef Christophe Vauthier reinvents the marine terroir with dishes that respect the seasons and local producers, drawing on short supply chains and island-sourced ingredients.
