His culinary journey began under the influence of his grandfather Wilbur, known for crafting flavorful dishes from simple components, and his father, who is a wine producer. After managing a wine cellar for nearly ten years, Massimiliano opened his own restaurant, combining local tradition with self-guided study and professional training. The restaurant is located just 50 meters from Riposto's fruit and vegetable market and fish market, enabling daily access to exceptionally fresh ingredients. This proximity allows the menu to evolve constantly, offering guests a varied experience even within a few visits. Massimiliano’s approach highlights seasonal produce and native flavors, blending tradition with innovation to present refined, surprising dishes. Vico Astemio is distinguished by an inventive reinterpretation of Sicilian classics that tells the story of its territory through fresh, high-quality ingredients and contemporary techniques.
