Dialogues

Dialogues is a contemporary restaurant in Biarritz. It is recorded in the Michelin Guide as a Nouveau entry and appears as a selected establishment. A complementary offering in the basement provides a convivial "cave à manger" for an alternate, more casual dining experience. The restaurant manages its own reservations and asks diners to contact them directly. The dining room displays contemporary elegance with solid wood tables, emerald green banquettes, mixed-fabric armchairs, a backlit white marble counter and a large mineral-style mural made from natural materials. The cuisine is creative. The kitchen is led by Adrien Zedda and Thomas Bouanich, the latter associated with Culina Hortus in Lyon. Signature plates include Cocos de Paimpol with green curry and a roasted celeriac slow-roasted twelve hours with mushrooms and a lovage-and-Chartreuse beurre blanc. The kitchen offers dedicated 100% vegetarian tasting menus and vegetable-and-seafood (végé-marin) menus. The dining concept follows a locavore, vegetable-forward approach expressed through refined small plates.
