Alfonsina is a family restaurant in San Juan Bautista La Raya, Oaxaca, founded by chef Jorge León and his mother Elvia. Named in honor of Jorge's grandmother, Alfonsina is nourished by two decades of tradition, evolving from a local tortilla shop to a culinary space that pays homage to ancient cooking techniques. The foundation of the cuisine rests on Elvia's mastery of nixtamalization and the regional cooking of the Central Valleys, passed down through generations. Chef Jorge León brings experience from renowned kitchens such as Casa Oaxaca and collaborations with Enrique Olvera, focusing the menu of Alfonsina on ingredients sourced directly from local producers in the surrounding territory.
