Ansils, located in the heart of the Benasque Valley in Anciles, Spain, is a Michelin-starred restaurant established in 1984. It merges tradition and innovation under the leadership of chef Iris Jordán, who continues her family’s culinary legacy as the third generation to run the kitchen. The restaurant sources ingredients locally, honoring the seasonal rhythms and flavors of the Pyrenees. Guests choose between two tasting menus: Alta Montaña offers seven meticulously curated courses for a comprehensive tasting experience, while Monte Bajo provides a shorter, yet thoughtfully crafted selection. Both menus highlight authentic mountain flavors refreshed with contemporary techniques. Housed in a former village house with two floors, the intimate setting features only ten tables, fostering a warm, inviting atmosphere ideal for shared dining. The restaurant does not accommodate vegan or vegetarian preferences and encourages reservations due to its limited seating and unique culinary approach.
