APPARE in Köln takes its name from the Japanese exclamation "appare", a shout of enthusiasm used when something is excellent, and the name reflects the team’s hope that guests will be delighted by the offer and the food. The restaurant presents traditional Japanese culinary traditions to a European audience. APPARE has received Michelin recognition as SELECTED. The kitchen is rooted in Washoku, the traditional Japanese cuisine that UNESCO inscribed as an intangible cultural heritage in 2013. The restaurant markets itself on the authenticity of Washoku. Hiroyuki Watanabe serves as Chefkoch; he was born in Tokyo in 1968 and has worked in the gastronomy sector for more than 30 years. His guiding motto is "Aus dem Studium des Alten Neues erschaffen" and his stated goal is to develop a new style by combining study of classical techniques with contemporary interpretation. He brings a measured, personal reinterpretation to the Cologne kitchen. Menus run at lunch from 12:00–15:00 and as a dinner multi-course service from 18:00–22:00. The house stages special events such as sake-pairing dinners.
