Atelier Noun

Atelier Noun is an intimate small restaurant created by converting an existing house into a warm dining space, run by hostess Sandra Ponchaut and a chef. It opens onto a magnificent terrace and natural garden, offers private parking, seats a maximum of 34 and has a planned renovation. The combination of precise, modern flavours, subtle Asian influences and the garden terrace distinguishes the dining experience. Interiors use natural, pure materials with clear Scandinavian lines and small, personal seating that produces a cozy living-room feel and a homely, welcoming vibe. The couple’s attentive hospitality and its atmosphere are praised in the Michelin Guide 2024 and Gault&Millau 2026. The chef pursues a purer, modern French approach with subtle Japanese and Asian accents, expressed through primarily composed menus emphasising purity, complexity and layered flavours. Service is tasting- and menu-driven to showcase technical precision. Bert Castermans is the chef. Specialties include marinated Zeeland mussels with chanterelles and dill butter; a flan with smoked mussel and smoked herring caviar finished with vin jaune sauce; and briefly pan-seared langoustine glazed with a sauce from the langoustine heads with a touch of honey and notes of ginger and fennel.
