Cadet sits between the Villa Majorelle and the École de Nancy museum in Nancy and occupies a century-old former hair salon; the restaurant is recognised by the Michelin Guide as a selected address and has been highlighted as a "Coup de coeur". The compact dining room is strictly limited to 16 covers, creating an intimate, focused setting within a sober, Scandinavian‑inspired, zen and minimalist fit‑out. The kitchen presents modern, contemporary cuisine that is simple, straightforward and readable and is served exclusively as menus à l'aveugle (blind tasting menus), a signature format that reveals the chef's approach through sequence rather than à la carte choices; the restaurant's philosophy favours simplicity and clarity of flavours over ornate presentation.
