Chef Luca Adobati, with experience from renowned kitchens across Europe including Da Vittorio, Noma, Yannick Alléno, and Mirazur, leads the kitchen with a refined approach grounded in locally sourced ingredients. Collaborating with over 50 local small producers, Casa Romano ensures the highest ingredient quality, transforming them through respect and creativity. The cuisine follows the rhythm of the seasons, merging Bergamasque traditions with contemporary techniques and international influences. Signature dishes include Tonno with bagna cauda di lago and nasturzio, Calamaretto alla plancia with bernese al porro and riso soffiato, Millefoglie di vitellone with pickled onion and hazelnut butter foam, and Casoncello di mare accompanied by blood orange, red shrimp, and bisque. The menu also features Risotto al peperone with pork belly confit and anchovies, and Pescato del giorno served with a trilogy of mushrooms. For dessert, Sottobosco combines puffed chocolate, caramel, and porcini mushroom ice cream.
