DOC is a restaurant situated in Folgosa, Portugal, where Chef Rui Paula leads a culinary space inspired by the philosophy of "Degustar Ousar Comunicar" (Taste, Dare, Communicate). The kitchen serves as a modern laboratory that honors multiple generations of recipes, intertwining traditional Transmontano-Duriense gastronomy with contemporary culinary techniques. The menu features regional ingredients sourced from the Douro and Transmontano areas, complemented by fresh seafood from the nearby coast, resulting in innovative dishes with Chef Paula's distinct signature. The restaurant offers a glassed dining room and a terrace suspended above the Douro river, providing panoramic views of terraced vineyards, schist landscapes, tranquil riverside villages, passing trains, and tourist boats. DOC integrates naturally with its surroundings through a wooden deck built on stilts over the river and two docks capable of accommodating 15 boats. Additional amenities include a wine cellar and parking facilities.
