Élevage is the signature restaurant of the Epicurean Hotel, built on a philosophy of crafting and elevating classic recipes. Developed out of Bern’s Steak House traditions and operated within the Mainsail Lodging & Development family, the kitchen emphasises patient refinement likened to a winemaker’s élevage. The team reworks timeless preparations to live fully in the present, arranging and refining components and technique until each plate reaches a new level. Élevage is recognised by the Michelin Guide as a selected restaurant in Tampa, offers reservations online through OpenTable and hosts private dining and events content on its site. The kitchen focuses on refining and elevating classic recipes and obsessively reinterprets timeless dishes; its culinary voice incorporates influences from the chef’s Puerto Rican and Italian heritage. Jonathan Atanacio is executive chef; he brings nearly 20 years of culinary experience, including leadership roles at Bern’s Steak House and years in New York City at Aquagrill and Olives, and he was part of the Epicurean Hotel opening team and the broader Mainsail culinary group.
