It has the distinction of being the first restaurant in Xcaret awarded a Michelin Star and is recognized with 5 AAA Diamonds, underscoring its high standards of quality and service. The establishment is led by Carlos Gaytán, the first Mexican chef to earn a Michelin star both nationally and internationally, who oversees a menu focused on contemporary Mexican cuisine. The intimate and elegant atmosphere of the restaurant is inspired by water— the meaning of 'ha' in the Mayan language— and features carefully crafted lighting and tableware that refine the multisensory experience. Dinner is served daily from 6:00 PM to 9:30 PM, Quintana Roo time. HA offers a nine-course tasting menu that celebrates Mexican heritage through innovative techniques and local ingredients, expertly paired with selected wines and spirits. Some of the signature dishes include wagyu tartare with avocado and hoja santa oil, tetela with escamoles and avocado purée, king crab combined with noisette butter ice cream and caviar, and pink mole with roasted beets and pistachios, which showcase a fusion of artistic presentation and reinterpreted tradition.
