Huna Le Restaurant

Huna is a small, creative restaurant in the Vallée de la Bruche in Waldersbach, opened by Nadège Monna and Antoine Huguenin. Nadège, originally Alsatian, built her expertise in front-of-house and hospitality; Antoine, from the Vosges, refined his cooking in Burgundy and on the Côte d'Azur before returning to Alsatian gastronomy. The restaurant offers a warm, intimate setting with a deliberately limited number of covers (14) to ensure personalized service, and seating and service are arranged to favor close exchange between guests and hosts. The atmosphere emphasizes authenticity and simplicity and presents gustatory pleasure. The team shares a commitment to seasonal cooking, terroir products and human encounters, and the cuisine is creative, seasonal and terroir-driven; the menu evolves with the seasons to highlight fresh local produce. Antoine Huguenin is the chef. Service is a single seven-course tasting menu — the menu de curiosité — that showcases produce from the restaurant’s 13-are potager conceived as a garden-forest. The team practices respectful wild foraging for plants, flowers and berries, uses fermented and preserved preparations (fermentation, dehydration, salting) and, in autumn and winter, relies on home-made preserves prepared during the growing season. The restaurant works closely with local artisans and producers to support sustainable, local gastronomy and is recognised for its creative cuisine.
