The cuisine combines global influences from the chef's travels with a strong focus on seasonal, local produce. The restaurant works from raw ingredients on site to produce inventive multi-course menus that emphasise texture and explosive flavour. Chef-proprietor Xavier Rambaud is originally from Deux-Sèvres and trained and worked his way up from commis to chef in a range of kitchens from bistros to starred restaurants, bringing that breadth of experience to ICI. Specialties include Saint Jacques with mango and chorizo; magret de canard with potato and caramelized onion; poisson de la criée with cauliflower and ginger; volaille with mushroom and héliantis; and mignon de porc with spinach and chard.
