Executive Chef Heros De Agostinis, born in Rome to Abruzzese and Eritrean roots, brings over 25 years of experience from Michelin-starred kitchens worldwide. Since opening in 2023, INEO has forged a culinary identity defined by a ‘metissage’—a fusion of diverse aromas and spices drawn from the chef’s multicultural background and travels. INEO holds one Michelin star and is distinguished for its generous bread trolley, featuring traditional breads from Abruzzo paired with local olive oil and Normandy salted butter, alongside international varieties reflecting the chef’s journey.
