Kimtxu

Kimtxu is an Asian-inspired tavern situated in Bilbao’s city center, blending local Basque ingredients with refined Asian cooking methods. Established in 2014 by chef Iván Abril, a Galician native trained under Martín Berasategui and Jordi Vilà and experienced in kitchens across England and China, the restaurant crafts a distinctive culinary fusion. The interior offers a cozy, intimate atmosphere enhanced by Oriental decor, inviting guests to enjoy a relaxed dining experience. The menu features seasonal dishes designed for sharing, emphasizing a harmonious mix of flavors and textures that reflect careful sourcing and culinary creativity. Signature dishes include scallop sashimi with jalapeño and green olive escabeche, Korean steak tartar paired with Idiazábal cheese, Vietnamese Banh-mi with pork cheeks and foie gras, and a Korean duck lasagna enriched with toasted butter béchamel and kimchi. Kimtxu’s dedication to quality earned it a Bib Gourmand from the Michelin Guide in 2023 and recognition from Guía Macarfi and Guía Repsol.
