La Bicicleta is a Michelin one-star restaurant situated in Hoznayo, Spain, presenting a modern culinary experience centered on a cycling-inspired philosophy. The kitchen crafts a single seasonal tasting menu, La Grande Boucle, available in short and extended versions with 18 to 24 courses. This menu features vegetables, fish, and meats sourced according to the season, many from the restaurant’s own organic farm, Huerta El Francés, certified since February 2026, and Granja Moncobe, a mountain pasture farm dedicated to ecological extensive animal husbandry with local breeds. Under the direction of Chef Edu, the team delivers inventive reinterpretations of traditional bar pinchos such as Gilda, tortilla, and chorizo, blending local flavors with contemporary techniques. The tasting journey culminates in a refined dessert race finale, providing a sophisticated conclusion. Adaptations of the menu accommodate vegetarian, pescatarian, and vegan preferences on request. Sustainability and a close connection to their own gardens and farms define the restaurant’s ethos. Children and pets are welcome with prior notice, and gift vouchers are available.
