La Colombe

La Colombe is a family-run restaurant in La Bayorre on the edge of Hyères, opened in 1987 by Pascal and Nadège Bonamy. The house holds a Michelin Bib Gourmand; over decades the Bonamys have maintained values of quality, high standards and warm hospitality while continuously refining the house and its offer. The kitchen’s style combines regional flavours with creativity, and the restaurant presents set menus that highlight daily market produce. La Colombe offers catering, take-away and delivery services and sells gift invitations and vouchers that can include beverage formulas. The dining room is small and nicely decorated in a contemporary, trend-aware scheme of soft grey and ivory tones with modern materials. A pleasantly ventilated terrace is available for lunches. The cuisine champions a seasonal, market-driven Mediterranean approach rooted in Provençal terroir and balances creativity with tradition. All dishes are prepared in-house, 100% fait‑maison from exclusively fresh products. Plates are adapted for vegetarians or for food intolerances on request. Pascal Bonamy is Maître Restaurateur and a member of the Collège Culinaire de France. Specialties include filet de rouget grondin with bouillon d’étrilles and croûtons à la rouille and the Menu Découverte tasting selection.
