La Madeleine

La Madeleine is a Michelin one-star restaurant in Sens with a local history of more than 34 years. Recent operational changes include adjusted opening hours implemented to protect staff and ensure the restaurant’s viability in the face of sharp increases in energy and raw material costs. The house offers a sommelier selection to accompany courses and runs cooking classes on Sundays. The kitchen follows a market-driven philosophy: products bought each morning at the market dictate the recipes. The team emphasises seasonality, careful sourcing and classical culinary techniques married to personal touches described as "a little love and a lot of passion." The cuisine presents modern, product-led cooking executed with selected culinary techniques. Patrick Gauthier leads the kitchen. Specialties include Onsen-style egg (L’oeuf façon Onsen), Wagyu beef with yuzu, seasonal set menus at fixed prices and dégustation / tasting menu experiences.
