La Trota, established in 1963 by Emilio and Rolanda Serva, is a family-run restaurant in Rivodutri, Italy, situated beside the Santa Susanna spring within a natural reserve. Evolving from a riverside trattoria to a Michelin-starred venue, it has become a reference point for lake cuisine through the culinary leadership of Sandro and Maurizio Serva.
